It was great to welcome back former Level 3 Advanced Professional Cookery student Oliver Mather, who put on a cooking masterclass for our current group.

Oliver has excelled after completing his course and is now a Sous Chef at Two AA Rosette restaurant, The Punchbowl Inn, Cumbria.

The rising culinary star reached the final of North West Young Chef of the Year in 2018 and was keen to share his skills back in his old kitchen.

“It’s been a bit strange to come back but it will be good to pass on some new dishes and ideas to the group which they wouldn’t have used before,” said Oliver.

He demonstrated his knowledge and highly skilled technique in creating a Venison dish with Beetroot Puree, Kale and Blackcurrant Sauce as well as a classic Lemon Tart (dishes from the Punchbowl).

The former Rivington and Blackrod High School pupil works under Head Chef, Alex Beard who previously worked at a 3 Michelin star restaurant.

Having now progressed from Chef De Partie at the Punchbowl, Oliver remembers his time with us fondly.

“I learned lots of skills on the course from well experienced tutors. They prepared me for what to expect in the industry and helped to increase my knowledge and progression into employment.”

Oliver is keen to keep improving his skill set and has plans to enter the North West Young Chef of the Year competition again.
